Here is a wonderfully hormone healthy and delicious bread for your holiday week. Coconut flour tends to be a bit dry but the fruit and veggies in here take away the dry texture. If you want the bread to be a little more dense, add 1/4 cup almond flour. ❤️ Cecily

Ingredients
2 small Carrots, shredded
1 Apple, shredded
1 ripe banana, mashed
4 medjol dates, pitted
5 eggs
1/2 cup butter or coconut oil, melted
1 teaspoon vanilla extract
2 tablespoons maple syrup
1/2 cup coconut flour
1/4 teaspoon baking soda
1/4 teaspoon sea salt
1 teaspoon cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
Preheat oven to 350 degrees. Be sure to grease the bread loaf pan with butter.

Shred carrots and apple, set aside.

In the bowl of a food processor, add banana, dates, eggs, butter or coconut oil, vanilla extract and maple syrup and process until dates are completely broken up and mixture is smooth.

Next add coconut flour, baking soda , sea salt, cinnamon, ginger and cloves to food processor and process until a batter forms. Remove blade from bowl and stir in shredded carrots and apple.
Pour batter into prepared loaf pan and bake for 45 – 50 minutes or until toothpick inserted in center comes out clean.
Allow loaf to cool for 10-15 minutes.
