Try these delicious pre-biotic fiber pancakes! Make extra and freeze then for busy mornings.
Banana Flour Pancakes
Ingredients:
1 cup Green Banana Baking Flour (this can be found at most health food stores or online)
1 teaspoon of baking soda
1/4 tsp salt
3 tablespoons honey or maple syrup
3 eggs whisked
1 teaspoon of natural vanilla extract
1/2 cup nut milk such as almond (you may need a bit more)
2 teaspoons lemon juice or apple cider vinegar
Grass fed butter, ghee or coconut oil to cook in
Method:
Whisk together eggs, sweeteners, nut milk and vanilla. Mix together dry ingredients and combine everything together.
Heat a pan to medium heat and drop enough batter to make small pancakes (large ones will fall apart.) Heat until bubbly on the first side and then flip and cook until the second side is done.
Top with some pasture butter, and a little of this:
Berry syrup
1cup organic Berries (I often use frozen berries)
Few drops of stevia (to taste)
1/3 tsp of Maple flavoring (this is natural and available at most health food stores)
1/4-1/3 cup water
Place all ingredients on stovetop in a small pan on med heat and simmer until berries have broken down. Can be slathered on top of pancakes as is or put in the blender for a thinner puree.
