These are dense, moist and satisfying! Not much like regular brownies in texture, but full of flavor and ready to handle any chocolate cravings. They are packed with healthy veggies but you’ll never know. I topped
Cauliflower Brownies
1 cup of cooked, frozen thawed cauliflower (I used thawed frozen riced cauliflower)
1 small sweet potato
5T grass fed or pastured butter melted (coconut oil if dairy free)
3T unsweetened cocoa powder OR 2.5 oz of very dark (88% or more) chocolate, melted
1/2 tsp of salt
3 pasture raised eggs
1/3 cup of coconut sap sugar
1/2 tsp baking powder
3T of coconut flour
1/3 cup very dark chocolate chips
1 tsp vanilla
Preheat oven to 400
Grease an 8×8”pan
Squeeze excess liquid out of the cauliflower by wringing it through a dish towel. Peel and boil sweet potato until soft.
Purée sweet potato and cauliflower in a food processor or blender until very smooth. Mix all of the rest of the ingredients in a large bowl with cauliflower and sweet potato until well incorporated.
Pour in to the pan and spread batter evenly
Bake 30 min
Let cool, slice and enjoy!
