1 12 oz package of riced thawed cauliflower. You can use your own riced cauliflower or cauliflower florets, just make sure it is cooked.
1-2 cloves of garlic peeled
Fresh lemon juice from 1 lemon or 3 T of lemon juice
4T good quality extra virgin olive oil
1/2 tsp salt (or to taste)
1/4 tsp fresh pepper (or to taste)
Method:
Put the thawed cauliflower into a clean kitchen towel and wring out the excess water. Place all ingredients in a food processor or blender and blend until smooth.
Pair with cut up veggies or low carb crackers like Jilz (I love the Mediterranean flavor!!)
This makes a wonderful lunch or mid afternoon snack
