Creamy Strawberry Beet Blueberry Coconut Popsicles
Ingredients–
1 can of full fat coconut milk
1/4 cup raw honey
1 cup whole strawberries with green tops removed
1 tsp beet powder (I like this one https://www.humann.com/products/superbeets-superfood/?t=1&attribute_pa_flavor=original-flavor&gclid=EAIaIQobChMI9aij7-6F3AIVT77ACh3JSgY9EAQYAiABEgITgfD_BwE )
1/2 cup blueberries
A pinch or two of salt
1 tsp pure vanilla extract
Method–
Blend coconut milk, strawberries, honey, beet powder, vanilla and salt in a blender on high until smooth and creamy, fill half of popsicle molds 1/3 to 1/2 way up depending on size of molds.
Place in freezer for an hour or two until set
Reserve half of the mixture in refrigerator. When the strawberry/beet half is mostly solid add blueberries and blend until smooth. Pour over the strawberry mixture in the molds and tuck a few blueberries and strawberries along the sides if you like.
