Refreshing lemon blackberry popsicles
1 can coconut milk (full fat; 13.5 oz)
1/2 cup raw honey OR coconut sap sugar (I like these refreshing and tart, if you need a little more sweetness add a bit of stevia)
1 tablespoon lemon zest
1/2 cup lemon juice
1/2 cup blackberries (any type of berries will work!)
-In a saucepan, add coconut milk, honey or sugar, and berries and lemon zest to a small saucepan. Stir over medium heat until the sugar dissolves. Continue to warm until steaming, but not boiling. Remove from heat, strain through a fine strainer using a wooden spoon to smash the berries and extract pulp and juices through while filtering out the seeds. Cool in the refrigerator.
-Add the lemon juice stirring to combine.
-Pour into your popsicle molds and freeze until solid, enjoy!!
