Ingredients:
One head of organic cauliflower
Coconut or grapeseed oil (few tbsps.)
1 Tbsp Sesame oil (if you have it, gives Chinese take-out flavor)
1 onion, chopped small
A clove or two of garlic
Tamari or gluten free soy sauce
2 pasture raised eggs
A few cups of frozen veggies that you like
A teaspoon of Chinese 5 spice powder (to taste really, see how you like it, it’s available at most groceries in the spice aisle)
Optional- Protein – Some rotisserie chicken (so easy!) If you have other leftover meat or seafood, toss it in!
Toppings- Fresh ground black pepper and/or Siracha sauce, green onions, fresh cilantro or raw chopped onions
Method:
Chop the cauliflower into rough sections and run through the food processor, either regular or grate attachment works. If no food processor, grate it but do it over the sink, it flies everywhere
Sautee the onion in oil until soft and translucent, add the garlic & sauté a few minutes watching it does not brown and become bitter.
Add a few tbsp. of oil and the cauliflower, sauté until soft (5 min-ish) Add your veggies and sauté until warmed
Season with tamari sauce to taste (few tbsp) and add Chinese 5 spice powder
Make a little well in the middle of the pan, add sesame oil, and pour in the eggs. Sauté until eggs are cooked, mixing them a bit with the rest of the dish.
Toss in meat until it is warmed through
